    Tuna Stuffed Sweet Peppers are a healthy snack that can made in under 5 minutes with just 6 nutrient-dense ingredients. Halved sweet peppers stuffed with a salty sweet tuna mixture including: flaked tuna, mayonnaise, relish, red onion and black pepper.

    With so much negativity surrounding our lives lately, let me share a positive from this COVID-19 fiasco. Working from home since March has given me the opportunity to get so creative with my meals and snacks, I’ve honestly been loving it! Yes, even Dietitians get stuck in ruts of eating the same things over and over again, don’t forget that we’re human. These Tuna Stuffed Sweet Peppers are a quarantine creation that has become a staple healthy snack in my life. They are not only so easy to make but packed with nutrients and have that salty sweet combo that I live for. If you are looking for a quick, super satisfying, nutrition packed snack – I can’t recommend this recipe enough.

    • Sweet peppers (now in season for Fall – Fall Fruit and Vegetable Guide)
    • Canned tuna
    • Mayonnaise
    • Relish
    • Red onion
    • Black pepper

    • Tuna Stuffed Sweet Peppers are the perfectly balanced healthy snack that we all need in our lives. (macros provided with the recipe).
    • Canned tuna is a food source rich in protein, vitamin D and omega-3s.
    • Sweet peppers are a rich source of several vitamins and minerals including: vitamin C, A, E, K1, B6, folate, and potassium. They can also be used as a low carb alternative to crackers or chips. They still offer that crunch and you’ll get more bang for you buck, thank me later.

    • Sweet peppers contain several antioxidants and plant compounds, which may offer varying health benefits ranging from eye health to cancer prevention. Remember to eat the rainbow and consume several colors of sweet peppers when at all possible to reap their heath benefits.
    • The omega-3 content of canned tuna can reduce inflammation in the body and the vitamin D content promotes bone health as well as proper brain function.

    Equipment

    • Chef knife
    • Cutting Board

    Ingredients

    • 21 sweet peppers, halved
    • 1 can tuna in water, drained
    • ¼ cup red onion, chopped
    • 1 ½ tbsp mayonnaise
    • 1 ½ tbsp relish
    • Black pepper, to taste

    Instructions

    • Add all of the ingredients from the can of tuna to the black pepper to a mixing bowl. Use a fork to mix and help flake the tuna. Place mixture to the side
    • Wash and halve the sweet peppers.
    • Take a spoonful of the tuna mixture and place it on the halved sweet peppers.

    Macros per serving (recipe yields 2 servings): 23g carbs, 9g fat, and 18g protein
