    With all of our lives getting busier during the holiday season, whether you are stuck at home or not, stocking your fridge with healthy grab and go food items is ESSENTIAL. See what I did there? 😉 Last week I had a million things going on, so stopping and prepping a meal was just not an option at times. We all can relate to those days, right?! I ended up throwing this snack together at one point and not only was I surprised by how flavorful it was, but it literally took me under 5 minutes to prep. That’s the kind of healthy snacks we all need in our lives when times get busy! This Balsamic Tomato and Blue Cheese Salad has a sweet yet savory with a hint of sharp creaminess flavor that you will love. Also, it’s 100% on brand with the holiday season and I’m here for it.

    Equipment

    • Cutting Board
    • Chef knife
    • Sauté pan

    Ingredients

    • 1 ½ cup tomatoes, sliced
    • 1 slice turkey bacon, halved and sliced
    • ½ oz blue cheese, crumbled
    • ½ cup microgreens
    • Black pepper, to taste
    • 2 tsp olive oil
    • 1 tsp balsamic vinaigrette

    Instructions

    • Place a sauté pan over medium heat and sauté the turkey bacon for 2-3 minutes. Place in a bowl and let cool.
    • Slice tomatoes and plate them. Top with cooled turkey bacon, blue cheese crumbles, micro greens, and black pepper.
    • In a small bowl add the olive oil and balsamic vinegar, mix well and drizzle over the salad.
