As I’m sure you’ve caught on by now, I’m OBSESSED with taking traditional comfort meals and not only making them healthier but macros-friendly. By doing this, the feeling of restrictive eating or missing out is nonexistent and you can focus on what’s important – enjoying your holiday with the ones you love. Between the crunch of the fresh green beans, the creaminess of the mushroom soup, the softened slices of mushrooms, and the browned french fried onions (the one ingredient I refuse to sacrifice) – it’s heaven in a bite. This Homemade Fresh Green Bean Casserole is the perfect dish to prepare for your Thanksgiving celebration this year, no matter how big or small.
The classic version of green bean casserole has ALWAYS been my favorite dish at a Thanksgiving meal and the inspiration behind this recipe. However, in the classic recipe most of the ingredients are canned and contain items that we just don’t need in our bodies. Which made me determined to create a healthier and more quality ingredient alternative. This Homemade Fresh Green Bean Casserole is a recipe I’ve perfected over the last few years and not to toot my own horn, but I actually prefer it OVER the classic recipe now. With the holidays looking a bit different this year, I encourage you to find the silver lining. - Fresh green beans
- Butter
- Onions
- Garlic
- Mushrooms
- Whole wheat flour
- Chicken broth
- Heavy whipping cream
- Sea salt

- Gram content wise, one serving of this dish will contain the majority of your fat and about half of your carbs for the meal. This allows room for some turkey and gravy, as well as a starchy carb of your choice.
- Pro Thanksgiving Meal Tip: consume the main meal for the holiday and if you decide to have dessert (no shame in that – I sure will) wait two hours after the meal. This allows time for digestion and absorption of the meal and will limit the amount of fat storage that may occur. You’re welcome!

Homemade Fresh Green Bean Casserole
Equipment

Ingredients
- 24 oz fresh green beans, chopped in 1 inch pieces
- 1 tbsp butter
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- ¼ cup whole wheat flour
- ½ cup heavy whipping cream
- 1 cup chicken broth
- 1 tsp sea salt
- 1 tsp black pepper
- ¾ cup french fried onions
- Olive oil cooking spray
Instructions
- Preheat oven to 350 degrees.
- Place a sauté pan over medium heat and add the butter to the pan to coat the bottom. Once coated, add the onions and cook until they are translucent. Add the garlic until aromatic, then add the mushrooms and cook until they are half of their original size.
- Sprinkle the flour over the vegetable mixture and stir until the flour is evenly distributed. Pour in the chicken broth and heavy whipping cream, bring to a simmer. Add the salt and pepper, stir and pull from the stovetop.
- Place the fresh green beans in a large microwavable bowl. Fill up the bowl with water until the green beans are covered. Cook in the microwave for 5 minutes. Drain the grain beans.
- Spray the casserole dish with olive oil cooking spray. Pour the green beans in the casserole dish and cover with the mushroom soup. Stir to disperse evenly. Top with the french fried onions and bake for 20 minutes.
