Ingredients
24 ozfresh green beans, chopped in 1 inch pieces
1tbspbutter
1mediumonion, chopped
3clovesgarlic, minced
8ozmushrooms, sliced
¼cupwhole wheat flour
½cupheavy whipping cream
1cup chicken broth
1tspsea salt
1tspblack pepper
¾cupfrench fried onions
Olive oil cooking spray
Instructions
Preheat oven to 350 degrees.
Place a sauté pan over medium heat and add the butter to the pan to coat the bottom. Once coated, add the onions and cook until they are translucent. Add the garlic until aromatic, then add the mushrooms and cook until they are half of their original size.
Sprinkle the flour over the vegetable mixture and stir until the flour is evenly distributed. Pour in the chicken broth and heavy whipping cream, bring to a simmer. Add the salt and pepper, stir and pull from the stovetop.
Place the fresh green beans in a large microwavable bowl. Fill up the bowl with water until the green beans are covered. Cook in the microwave for 5 minutes. Drain the grain beans.
Spray the casserole dish with olive oil cooking spray. Pour the green beans in the casserole dish and cover with the mushroom soup. Stir to disperse evenly. Top with the french fried onions and bake for 20 minutes.
