This is a nutritiously balanced dish that can be made for the family as a dinner option or it can be used as a meal prep option. If you decide to use this recipe as meal prep for the week, make sure that you store all of the ingredients separate. If you do not separate the ingredients you’re going to reheat a pile of mush. Expert tip: you can spiralize a bunch of zucchini at one time, freeze it in a gallon reusable storage bag and use the noodles as you need them so that no zucchini goes to waste. 😉 Don’t worry, if you didn’t run out and buy a spiralizer a couple of years ago during the zoodles craze, Trader Joe’s and Sprouts have frozen or fresh zucchini noodles you can purchase.

- 93/7 ground turkey
- White onion
- Garlic
- Red pepper flake
- Tomato basil marinara
- Zucchini noodles
- Mushrooms
- Avocado oil
- Grated parmesan
This recipe holds a special place in my heart because while my Mom was still with us a few years ago, I went on and on about wanting a spiralizer and all of the cool things I could make with it. Zucchini Noodles in a Ground Turkey Marinara Sauce
Equipment
- Sauté pan
- Frypan
Ingredients
- 1 lb 93/7 ground turkey
- ½ white onion, diced
- 3 cloves garlic, minced
- Red pepper flake, to taste
- 2 cups tomato basil marina
- 8 cups zucchini noodles spiralize zucchini or purchase zucchini noodles
- 8 oz mushrooms, sliced
- 1 ½ tsp avocado oil
- Grated parmesan, to taste
Instructions
- In a sauté pan over medium heat, cook the chopped onion until translucent and then add the garlic. Once the garlic becomes aromatic, add the ground turkey and mix the onion and garlic within the ground turkey. Cook the meat mixture until all of the pink in the meat is gone. Add red pepper flake if you prefer to spice this dish up (I love it that way) and add the marinara sauce. Bring the meat sauce to a simmer.
- Coat a frypan with avocado oil over medium heat. Add zucchini noodles and mushrooms, sauté covered for about 5-7 minutes, stir occasionally.
- Add the zucchini and mushroom to the meat sauce and mix together. Let the flavors combine for 1-2 minutes and then serve.
- Top each plate with grated parmesan cheese.
