My girlfriend, Samantha Tuohy, shared a video of her making this super yummy breakfast concoction last week. I had immediate heart eyes and my mouth was watering, I knew I had to ask her what was in it. While I switched up a few ingredients, she 100% inspired this Sweet Potato and Chicken Sausage Scramble, so thanks girlfriend! As a Dietitian with a food blog, I am ALWAYS looking for new ways to make things and different ingredients/seasonings to try out. What I love about asking others how they make things is that it opens my eyes to new possibilities and combinations that I would not have tried out otherwise. For example, I NEVER would have thought to add chili powder to my potatoes and Samantha told me she ALWAYS uses this seasoning with her potatoes. In my opinion, that’s the ingredient that makes this dish. Also, I always use green bell pepper in most breakfast dishes while she always uses red bell pepper, and yes it brought a whole new dynamic to this dish. Anyway, the takeaway is to always observe and ask what others are doing. This is the key to how we create that variety to achieve that long-term sustainable healthy lifestyle. - Sweet potato (currently in season – Winter Fruit and Vegetable Guide)
- Chicken sausage (I used the garlic and herb chicken sausage from Trader Joe’s)
- Red bell pepper
- White onion
- Egg
- Garlic powder
- Chili powder
- Sea salt
- Black pepper
- Olive oil cooking spray

Sweet Potato and Chicken Sausage Scramble
Equipment
- Cutting Board
- Chef knife
- Sauté pan
Ingredients
- ¾ cup sweet potato, roughly chopped
- 1 link chicken sausage garlic and herb chicken sausage from Trader Joe's
- ¼ cup red bell pepper, chopped
- ½ cup white onion, chopped
- 1 large egg
- ½ tsp chili powder
- ½ tsp garlic powder
- Sea salt, to taste
- Black pepper, to taste
- Olive oil cooking spray
Instructions
- Fully coat a sauté pan with olive oil cooking spray and place over medium heat. Add all of the ingredients, minus the egg, to the pan and cover. Stir every 1-2 minutes and sauté for 6 minutes.
- Scramble the egg with a fork in a separate bowl and add to the mixture in the pan. Allow the egg to cook in the pan for 1 more minute and place the mixture in a bowl.
