With 4th of July around the corner, it’s clear that celebrations will be a little different this year. But that doesn’t mean that you can’t have fun with the holiday! I’m always about festive vibes. So, I wanted to share a patriotic side dish that you can take to ANY kind of gathering or simply serve to your family at home. Either way, this Strawberry and Blueberry Spinach Salad is definitely on-brand with the 4th of July and that’s all that really matters.

- Strawberries are a rich source of of vitamins and minerals, including: vitamin C, manganese, folate and potassium.
- Blueberries provide vitamin C, vitamin K and is considered a high fiber fruit option.
- Spinach is an excellent source of vitamin A, C, K1, iron, folic acid and calcium. Spinach also provides insoluble fiber, which is an important factor in keeping bowel movements regular.
- Overall, this salad offers several antioxidants, anti-inflammatory properties, and is considered a low-carb option that will provide blood sugar control.
Strawberry and Blueberry Spinach Salad
Equipment
- Chef knife
- Cutting Board
- Large Bowl
Ingredients
Salad
- 8 cup baby spinach
- ¾ cup blueberries
- ¾ cup strawberries, sliced
- ¼ cup feta cheese, crumbled
- ¼ cup red onion, chopped
Dressing
- ½ cup olive oil
- 2 tbsp honey
- 1 tbsp dijon mustard
- ¼ cup balsamic vinegar
- ½ tsp sea salt
- ½ tsp black pepper
- 1 clove garlic, minced
- ½ tsp dried thyme
Instructions
- Add all salad dressing ingredients to a large bowl and whisk together for 30 seconds. Place in a jar in the fridge until you are ready to serve the salad.
- Slice the strawberries and chop the red onion. Add the spinach to a large bowl and top with the strawberries, blueberries, feta cheese and red onion. Toss the salad in 4 tbsp of dressing and serve.
