    Maple Turkey Bacon Hash is that delicious sweet and salty yet savory dish that is the perfect option for Mother’s Day Brunch or if you’re feeling sassy on a Sunday and want a yummy breakfast option!

    You guys, this maple turkey bacon hash is simply TO. DIE. FOR.  The sautéed turkey bacon, baby red potatoes, onion, and spinach doused with maple syrup and topped with an over easy egg is everythingggg.  Not only is it super filling but it’s a taste explosion in your mouth.

    The BEST THING about this dish is that it’s macro conscious and friendly to your waist line (the nutrition info is available in the notes section of the recipe).  So enjoy EVERY bite and know that you’re fueling your body in a nutritiously balanced, mindful way.

    • Baby red potatoes WITH the skin offers insoluble fiber, which is the fiber that helps keep our bowel movements regular. Potatoes are also a rich potassium source.
    • Spinach provides Vitamins A, C and K, Iron, Magnesium and Manganese.
    • Turkey bacon is a low fat, protein source that is so yummy and heart friendly.

    Sautéed turkey bacon, baby red potatoes, onion, and spinach doused with maple syrup and topped with an over easy egg.

    Equipment

    • Sauté pan
    • Chef knife

    Ingredients

    • 3 slices turkey bacon, chopped
    • 1 cup baby red potatoes, chopped
    • ¼ cup white onion, chopped
    • ¼ cup spinach, roughly chopped
    • 1 tsp avocado oil
    • 2 tsp maple syrup
    • 1 large egg
    • Olive oil cooking spray
    • Sea salt, to taste

    Instructions

    • Spray a skillet with olive oil cooking spray and place over medium heat. Sauté the chopped turkey bacon in the skillet for about 3-4 minutes or so, place in a bowl to the side.
    • Add the avocado oil to the skillet and coat the bottom of the pan. Add the chopped onion and sauté for 30 seconds or until aromatic, add the potatoes and continue to sauté for about 4 minutes. Salt the potatoes according to your taste (a little bit goes a long way). Cover the mixture and stir occasionally. Add the turkey bacon, spinach and maple syrup and sauté for 1 more minute. Plate the mixture.
    • Spray your saute pan with cooking spray one more time. Add the egg to your pan and cook over easy. Place on top of the plated mixture.

    Macros per serving: 35g carbohydrates, 14g fat, 24g protein
