    Baked chicken breast over a bed of herb seasoned cherry tomatoes, brussel sprouts and cauliflower topped with parsley, feta and freshly squeezed lemon. Baked Mediterranean Lemon Feta Chicken is the perfect quick yet delicious weeknight dinner option.

    Baked Mediterranean Lemon Feta Chicken

    Quarantine or not, we all can appreciate a super tasty dinner that doesn’t keep us in the kitchen for hours. Baked Mediterranean Lemon Feta Chicken is 100% that dish and can be prepared and fully cooked in 30 minutes. That’s what I’m talking about! This dish can serve a family of 4 or is perfect for any individual meal prepping.

    For those of you that can’t tell by my outrageously long last name, I am part Croatian. The fresh yet savory taste explosion from this dish always reminds me of my family and the time I spent in Croatia. The thyme, oregano, and garlic powder from the mediterranean marinade combined with the juice from the oven roasted tomatoes is EVERYTHING and those flavors can tasted throughout the entire dish. Topped with chopped parsley, squeezed lemon and feta cheese that melts perfectly over the chicken breast. If you can’t tell by now, I’m head over heels for this dish.

    • Chicken breast
    • Brussel sprouts
    • Cherry tomatoes
    • Cauliflower
    • Lemon
    • Feta cheese
    • Parsley
    • Thyme
    • Oregano
    • Garlic powder
    • Sea salt
    • Black pepper
    • Avocado oil

    Nutrition Content

    • This dish is considered low carb and can assist in weight loss.
    • If you’d like to increase the carbs in this dish, simply add potato to the vegetable mixture or toast some bread on the side.
    • Adequate amounts of protein and fat are provided .
    • 4 grams of fiber provided with each serving.
    • Gluten free and dairy free meal option.
    • Keto, Whole 30, and Paleo friendly.

    Health Benefits

    • Chicken is a lean meat protein source, meaning that it’s fat content and heart health risk is much lower than other high fat meat protein sources.
    • Brussel sprouts are a rich source of vitamin K and C, as well as antioxidants that may prevent cancer growth.
    • Tomatoes have high amounts of the plant compound lycopene, which is scientifically linked to heart health and cancer prevention.
    • Cauliflower is a low carb solution to allow the meal to have substance and provide satiety but not the excessive carbs.
    • Lemon adds a punch of low calorie flavor and once consumed turns alkaline in the body to aid in making our bodies less acidic.
    • Feta cheese is a lower fat cheese that still provides creaminess to this dish without all of the extra calories.

    Equipment

    • Oven
    • Cutting Board
    • Chef knife
    • Medium sized bowl
    • Baking Sheet

    Ingredients

    • 2 boneless skinless chicken breasts, halved
    • ½ cauliflower head, separated into florets
    • 1 cup brussel sprouts, quartered
    • 2 cups cherry tomatoes I used the cherry tomato medley from Trader Joe's
    • 2 oz feta or blue cheese, crumbled
    • ½ cup parsley, minced
    • ½ lemon squeeze on top of each dish once plated

    Mediterranean Marinade

    • 1 tsp garlic powder
    • 1 tsp dried oregano
    • ½ tsp dried thyme
    • 1 tsp sea salt
    • ½ tsp black pepper
    • 2 tbsp avocado oil
    • 1 lemon, juiced

    Instructions

    • Preheat oven to 450 degrees.
    • In a medium sized bowl, combine all of the mediterranean marinade ingredients and whisk for 20 seconds.
    • Place the chicken, brussel sprouts, tomatoes, and cauliflower on a baking sheet. Evenly pour the mediterranean marinade over the chicken and vegetables.
    • Bake for 20 minutes.
    • Once plated, top with feta or blue cheese, parsley, and freshly squeezed lemon juice.

    Macros per serving (recipe yields 4 servings): 12 g carbohydrates, 11 g fat, and 19g protein
