Maple Turkey Bacon Hash
Equipment
- Sauté pan
- Chef knife
Ingredients
- 3 slices turkey bacon, chopped
- 1 cup baby red potatoes, chopped
- ¼ cup white onion, chopped
- ¼ cup spinach, roughly chopped
- 1 tsp avocado oil
- 2 tsp maple syrup
- 1 large egg
- Olive oil cooking spray
- Sea salt, to taste
Instructions
- Spray a skillet with olive oil cooking spray and place over medium heat. Sauté the chopped turkey bacon in the skillet for about 3-4 minutes or so, place in a bowl to the side.
- Add the avocado oil to the skillet and coat the bottom of the pan. Add the chopped onion and sauté for 30 seconds or until aromatic, add the potatoes and continue to sauté for about 4 minutes. Salt the potatoes according to your taste (a little bit goes a long way). Cover the mixture and stir occasionally. Add the turkey bacon, spinach and maple syrup and sauté for 1 more minute. Plate the mixture.
- Spray your saute pan with cooking spray one more time. Add the egg to your pan and cook over easy. Place on top of the plated mixture.
