Equipment

Ingredients

  • ¾ cup sweet potato, roughly chopped
  • 1 link chicken sausage garlic and herb chicken sausage from Trader Joe's
  • ¼ cup red bell pepper, chopped
  • ½ cup white onion, chopped
  • 1 large egg
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • Sea salt, to taste
  • Black pepper, to taste
  • Olive oil cooking spray

Instructions

  • Fully coat a sauté pan with olive oil cooking spray and place over medium heat. Add all of the ingredients, minus the egg, to the pan and cover. Stir every 1-2 minutes and sauté for 6 minutes.
  • Scramble the egg with a fork in a separate bowl and add to the mixture in the pan. Allow the egg to cook in the pan for 1 more minute and place the mixture in a bowl.
