Ingredients
¾cupsweet potato, roughly chopped
1linkchicken sausagegarlic and herb chicken sausage from Trader Joe's
¼cupred bell pepper, chopped
½cupwhite onion, chopped
1largeegg
½tspchili powder
½tspgarlic powder
Sea salt, to taste
Black pepper, to taste
Olive oil cooking spray
Instructions
Fully coat a sauté pan with olive oil cooking spray and place over medium heat. Add all of the ingredients, minus the egg, to the pan and cover. Stir every 1-2 minutes and sauté for 6 minutes.
Scramble the egg with a fork in a separate bowl and add to the mixture in the pan. Allow the egg to cook in the pan for 1 more minute and place the mixture in a bowl.
